  • @IriemanBR Hey there Irieman- sorry for the delay in response. I wouldn't use agar agar, I would hang the cheese in a flax fiber sprout bag to remove excess liquid then I would dehydrate it a bit to get a feta-like cheese. To be honest- the flavor is not much different so I find the extra work is not worth the effort. Sproutman's Kitchen Garden Book has a few recipes I like for harder cheeses (plus lots of helpful sprouting info).

  • Fishandfestival, thanks for your question. Yes, I do eat cooked foods and even non-vegan foods. I am supportive of all eating styles and see the benefits for all in adding more fresh produce and raw foods to their diet. I am about 80% raw on average. LIke you I am relatively new to the raw food world- about two years and growing more obsessed every day. The results are addictive!

  • I added chick peas and raw almonds to my cashews and made a very delicious cheese...I can't believe I waited so long to step into the world of raw food...I guess I felt intimidated by it and that's mostly why, but now I realize how easy it is to make all kinds of delicious raw foods...I can't believe so many people out there haven't awoken to the glory and reality that raw food is the best food to eat and that it is, in fact, the way we were meant to eat...Do you eat any cooked foods at all?

  • This is a great presentation...I want to try this recipe but I don't have a Vitamix...Could I use water (2 parts cashew to 1 part mineral water) as one of the ingredients, along with all the other ingredients you used, so that it'll be easier to blend?

  • @fishandfestival Do you have a food processor? I make my ricotta style cheese in the food processor instead of the Vita-Mix so that it doesn't get too creamy. A food processor will work well, it just needs to blend a while. You can add more water, but it will get runny, more like a cream sauce (which is also good in some cases!).   • @DeliciousRevolution Thanks for your speedy reply, but I don't have a food processor, just a blender, so I'll have to make do with that for now...Also, can I use plain unsweetened yoghurt as the main probiotic in my cashew cheese?

  • @DeliciousRevolution Okay...I finally made my first batch of cashew cheese and I followed your recipe, except that I added water because I have a regular blender...The taste exceeded my expectations and I just wanted to keep eating after I took my first taste...The only drawback was that I forgot to soak the cashews for 8 hours..Also, I used dry basil instead of fresh, honey instead of agave & a tbs of yogurt..Thanks for your great presentation and I look forward to seeing more of your videos...

  • VacationBoy, Understandable apprehension! Sorry to hear of your illness. In answer to your question I soak nuts over night and then use them in the morning. If I don't have time to prep them, I only keep them a max of two days in the fridge. I also tend to add lemon or lime as a natural preservative. Once the mixtures are made I only keep them 3 days. Luckily they go quick in our family of four.

  • QUESTION HERE; with this dish and other dishes...after you soak your nuts...HOW LONG DO THEY LAST IN THE FRIDGE? ( i made a pistatuo/wulnut " meat", saoked nuts,drained, food procersor with mexican spice and olive oil and after 3 days i ate some and got sick...now im scared on how LONG you can keep any nut mixture after you soak the nuts

  • Can't speak on the subject of all cashews, but the raw cashews I use start to grow a little tail on them after soaking which says to me that they are enlivening in some way. But I am not an expert on the subject, so you may want to skip cashew recipes if you have an issue with them. Thanks for tuning in.

  • I don't wanna be annoying, I quite like raw food recipes and this video of you is reeeeally useful and I added it to my favourites. But I have to say that cashews nuts are roasted before they can be eaten, so that any plant enzymes should be denaturated already... So, they are already dead. I would deal with plants in south America (I'm South American) and once tried to eat the raw cashew nut directly from the tree. It did not look even edible then.

  • Wow... that's a LOT of FAT! I prefer to stick with a low fat raw-cooked vegan diet and eat plenty of fresh fruits, vegetables and green leafy greens.

  • @elyze8 You are right, there are some serious fats in nut and seed cheeses. That said, it's not meant to be eaten straight! I use it as a spread or add some to sauces. like pesto to add a creamy touch. Fats are a healthy part of a balanced diet and contribute to our healthy in many ways, not the least of which is carrying fat soluble vitamins. All things in moderation. Thanks for watching!

  • No way ! Cheese without milk? What's the cost difference like when you make the cheese from nuts or seeds? Does it melt like cheese?

  • @baseballboy725 Yes, it is a delicious creamy cheese with out milk. It is more like cream cheese than a firm cheese like cheddar. And it doesn't melt well, but since it is a cheese for the raw food diet , nothing is heated over 118 degrees, so melting isn't really necessary. I do warm it on pizza in the dehydrator and it gets a little melty-ish. It tastes amazing. That's what counts.
