  • The pan is not hot enough, you should limit the yolks to just one, and he spends WAY too much time scewing around while the omelette is cooking....I can guarantee you the outside of that omelette was too tough; you can see crust around the outer edge - not good....do yourself a favor and find Julia Child's video on making a French flat omelette - she never has to touch the eggs while they're cooking.....

  • I think I can easily make millions if I take my cocking more seriously! You see, in this case adding the butter after the eggs and before the cheese would make that Omelette taste much better. Try it folks... don't let the butter mix with the oil before you start the actual cocking. Good luck

  • Jaimie says to use a 7" pan, but is obviously using a 10" pan. Also, teaching bad habits by using a fork and metal spatula on a nonstick surface, which really isn't a good idea. Finally, this omelette is going to taste more like butter than egg. Use cooking spray and save yourself a lot of calories.

    Being that most omelet recipes call for cream/milk/sour-cream, the buttery taste is intended in this dish. So no harm done in using butter. Besides, those sprays aren't really what one would call a natural product with no artificial additives.

  • @parahumanoid In fact, most recipes/tutorials on omelets recommend against adding any dairy, other than perhaps butter. Whenever I use butter with plain eggs, it overwhelms the taste of the eggs. Perhaps I'm an outlier, but I like my eggs to taste like eggs. I'm not prepared to argue how healthy the propellant is in cooking spray, but I know that a tbsp of butter is going to add a 100 cals that are completely unnecessary and IMO is counterproductive to the taste of the dish. :)

I cook my omellettes the exact way he does, pulling the edges, and I like mine with cheese, ham onions (cook beforehand) and tomato.

  • @claprain1029 no, he meant not overcooked. some time ago I made an omellette for my father, who was used to the overcooked eggs many ppl cook, I made it soft and silky, and he loved it. some dishes are overcooked very oftenly, fish and shrimp come to mind.

  • NOT perfect! Never ever season the omelette with salt before frying - the salt reacts with the proteins and causes the egg to go grey. To keep the omelette shiny yellow - season AFTER you have fried the omelette!

  • I forgot to say I added just a pinch of salt on the top after it was done, along with some chives. Served with a piece of 12 grain bread and some tea. Brilliant!

  • Just made this. I threw in some colby jack cheese, and some leftover ham from Christmas. Mine got a little golden brown, but you don't notice it in the texture at allll. It was the most creamy and delicious egg I've ever tasted.

  • @3sin7 it's either a ceramic non stick not a teflon non stick pan, or it's anodised, which means it's resistant to scratches. I think a professional chef knows what he's doing.
