Definately one of the best butchers I've seen. Table boning is cumbersome, slow and messy. You mate however done a pretty good job of it. Your cuts looked effortless and smooth which tells me your familiar with your work and theres a certain naturalness with your movement. Overall well done. Those that scoff at your skill are boners who work from a live chain feed. They do the same job in an average time of 30secs or less.
