I have got a very good hint for you to keeping the nice old Sports Engine in good shape with todays ultra dry eco fuels: Use 1:100 API TC two stroke oil / fuel mix as regular driving fuel, that keeps the old fuel-system gaskets, rubber parts, alloy parts etc... and cast iron metal surfaces of those vintage engines in excellent shape...and it also lubricates the valves and upper piston regions. Most Mercedes vintage owners in Germany do so :) Also keeps carbs and EFi injectors clean as new!
Dont forget to put 1:100 two stroke Oil API TC into the tank for each fill, because thats good for the carbs and the pistons..modern fuel does not take care of the old engine materials!

I owned a '73 SM new and it was a totally unique driving experience with 4 wheel monster inboard disk brakes, roller bearings, 3/4 turn lock to lock progressive power steering like a go cart or Indy car. The suspension was phenomenal on the fly compensation for speed and terrain for a ride like no other. Then top it off with that V-6 DOHC Maserati Engine. Superb Driving Machine! ;)
It sounds even better close up, especially in quaint old towns like Chichester where I live, with narrow streets to reverberate from ( even more so if there is a pensioner to burn past nosily!).
i don't agree , i really don't see the need at the starting point to rev the engine that high and drop the clutch while you are starting on a gravel road , your are only damaging the cv's . A gentle startup at 2500rpm , will induce less wheelspin so a better time . Have a great day .
Not want to offend you , but the SM was created as a grand tourer not a racing car . They did so well at the Rallye du Maroc in 1971, because they were heavily modified .
