Robertus911; The strongest shape is a sphere, is has no weak corners to break off. Plus it allows the largest inside volume with the least outside surface area to protect from space debris battles etc.

But the best shape for spinning up to simulate gravity would be a cylinder. Like you said a spinning sphere would have all different gravities, a cigar would have less variation. In fact everyone would have the same gravity on the same floor.
