I've never used eggs in my cornbread dressing ... matter of fact, no one I know uses eggs. I was surprised @ seeing that as an ingredient. But hey, to each his/her own, right?
@sistabiggbonz Eggs make your dressing stay moist. Once you bake the dressing in the oven it will not dry out with eggs in it. Especially if you're making your own cornbread, not the generic stuff used here.
@usaearthling, I understand that, but I've never used eggs (got recipe from my mother) and have never had a problem with dryness. It's just my preference not to use eggs.
@muffintop8991 I agree, It has been a tradition for us for many years. I guess if it's too dry you can use more gravy to moisten it on your plate. But when I use eggs it turns out so lovely. Now I am trying to convince some of my family that cranberry sauce is a great addition to this meal. Does your family eat it?
@usaearthling, sorry ... a little late answering this. I use boneless/skinless chicken thighs (some ppl use the breast, but to me, it adds to the dryness), chicken gizzards,. I use the stock from boiling the thighs & gizzards). I also simmer raisins, onions, celery, green peppers and scallions in chicken broth (until tender) and then my seasonings. Have never had a problem with dryness, but like I said, to each his/her own.

Pecans?? They need to stop playing! That Stuffing looks dry as hell. I mean...At least put some type of broth in it for moistness!

Duck stock makes the best dressing i dont eat duck but i love useing the stock it makes your dressing real moist

@usaearthling I boil neck and giblets from the turkey, boullion cubes, onion celery and butter so make my own stock to moisten my dressing with.

Looks pretty good but why no eggs in there? I allways add a couple a eggs to bind it together when I make dressing.
