  • I'm Peruvian and I approve of this recipe!! YUM YUM! Of course I like my traditional simple ceviche with truckloads of onions, but this is something I can whip out when I'm feeling "fancy" lol!

  • I did an asian spin on a ceviche with mussels and squid. Replaced salt with soy sauce, and dressed with a mirin-coconut milk reduction with the standard citrus juices and finished with cilantro. Simply amazing!!!

  • Mister Chef John, I have a (possibly silly) question. Why is it that every time I see a recipe including cucumber, the seeds get scraped out? Are the cucumbers in America-land full of poisonous, razor-sharp seeds, or something? Ours here in Australia are soft and lovely, so no one ever scrapes them out. I am so confused. :(

    Also, this recipe looks gorgeous.

  • @Mawgbot the seeds of a cucumber are loaded with water, so its probably to stop the ceviche from becoming watery.

  • Denaturation happens when proteins lose their "3D" structure (as well as their function and properties) by the action of heat, salt, alcohol or in this case, acid. So yeah, cooking and marinating are both ways of denaturalizing proteins.

  • Denaturing in extremely simple terms is just proteins in the fish breaking down. But Chef John you did a good job describing anyways! haha

  • Denaturation is the process in wich mostly proteins lose their so called 'tertiary structure and secondary structure' Sorta means it goes from '3D to 2D' Same thing happens to eggs when you cook 'em. That's why they turn white.

  • Mahi Mahi - the fish so nice they named it twice! It's also the fish that never sleeps.

  • the lemon juice DOES NOT cook the fish, the acidity changes the molecular structure of the proteins in the fish so it looks like it cooks it but it doesnt. thats why chef john said it denatures the mahi mahi

  • Sorry, but I WILL NOT eat ANY KIND of raw critter, from ANY place, ANYWHERE, at ANY time, including from & in my oun home! Subjecting foods to an acidic maranade is NOT enough to kill many harmful "bugs".

    @Insubordinate: I suggest YOU do some research on the number of parasidic infections contracted YEARLY in the asian rim area. 1.5 MILLION from just ONE TYPE of parasite alone. . . . and that's ONLY those cases which are reported & documented!!!!!!

  • Denaturing the proteins in the flesh is essentially what happens when you cook a piece of meat. Thus, yes it is cooking the fish in a technical sense.

    can of tuna, dried spice blend, canned orange slices, lettuce pieces, and pour over olive oil vinegrette dressing. surround bowl with tostidos

    GOOD TO GO!

  • @unkaodya it's not bacteria, it is parasites (roundworms etc) that can be in the flesh of raw fish. Freezing or cooking is supposed to kill the parasites. so if you make your sushi etc from prefrozen fish it should be ok.

    Denaturing means the bonds in the protein become destroyed, and the more this happens the more the protein loses its shape. This happens when you cook the fish or put it in really acidic liquid. Makes it more tender =)

  • @beefyramos seeds are packed with capsaicin. there is still enough of it in the rest of the jalapeno to make John's ceviche spicy as he prefers, but not as hot as his moustache is :-{D
