@cookwithsarah I'm not sure if you're serious or not but it's basically from the hides and bones of animals. For example, you can boil bones for a chicken stock and it can gelatinize in the refrigerator.

It gels because the connective tissue cook out of the bones and is transfer to cooking liquid. As it chills in liquid it causes it to solidify

I didn't care for the brine model. A brine doesn't denatue protein. This is about salt helping bind more h2o to meat
