What about the GT brand of Kombucha? Does that have any traces of caffeine? I ask because, a herbal supplement I am taking works best when caffeine is avoided. What store bought caffeine free brand would you suggest? Thanks in advance.
Your tip for decaffeinating tea doesn't work. If you leach out the tea with a small amount of boiling water that should work... at making your tea not be as good and cutting the caffeine but I assure you neither rinsing coffee beans nor tea leave will get anything but maybe trace amounts of caffeine out. Also the bacteria and yeast in the SCoBY as far as I know only work with caffeinated teas. There are a couple university studies out there, you should research a bit more.
@KatJaguar1122 Well, I would strongly suggest you send a piece of your SCoBY into a lab and have them tested for the probiotic content such as the organic acids and enzymes that kombucha is SUPPOSED to produce, because guess what, your stuff DOES NOT have them.
I mean you might get something that could be passed off as kombucha and you might even get a real nice placebo effect but, sorry to say YOU'RE DOING IT WRONG AND NO MATTER WHAT YOU SAY THE SCIENCE DOESN'T BACK IT UP.

I am so excited! I love kombucha and I tried to drink just a little a day but it became clear that my sleep was suffering so I had to give it up. All the other sites said that you couldn't have decaf so I thought it was all over. I can't wait to try this. Thanks Dave!
I really need to know if it makes a difference if Kombucha is ina plastic container or is it better in a glass container. My research tells me Kombucha should be made in a glass or stainless steel container not plastic but i see so many others such as "InstructablesTV" here on utube using plastic containers and indicating how it gives off a certain type of oxygen because of the plastic container which makes things more confusing....
Question... I am new to brewing kombucha and have my first scoby. I just transfered it (after reading directions on the base tea) to a new container (1gal) however the new container is waaay wider than my little scoby and I am wondering if it was safe to do so? Will the Kombucha grow larger and fill in the empty space? Or will it be more vulnerable to infection if there is a foreign item? I mean, my container is pretty clean and free of oils etc but I still get worried. It's not very BIG. Thx!
