Hey Rick that combo of the eggplant and the artichokes just rocks! The whole dish looks just so fresh and tasty! This has got to be one of my Rick's favorites!
i am officially hungry OMG OMG that looks soooo darn tasty! my husband haaatteeeeessss most of those veggies ESP. onions and eggplant, but he said this looks delicious!

cool recipe! You can make it vegetarian easily by replacing the chicken with some kind of bean, too and it would taste good.
