Well. If you cut them correctly, the shapes will lift off with the cutter after you cut it, then you can just gently push it out of the cutter into your hand and put it on a cookie sheet. If you use enough flour on your rolling surface, this will work great. The trick is to use more flour on the rolling surface than on the cutter. Then you don't have to bother with trying to pull up all the extra dough around the cookies.
