That looks delicious. I think I'll make that for a big hockey game night (Go Habs!), but with some garlic in there, and maybe some variety in the cheese, like with one half cheddar, the other have jack. And some bacon on half of it, to accommodate the carnivores without excluding the vegetarians.
I would make the sour dough roll into a bread bowl. Fill it with my favorite spinach dip recipe, and serve it with wheat crackers. eating the bowl after the dip is gone is tasty too. The spinach dip soaks into the bread, making it delicious.

you can cut down to the white parts but just make sure you don't include any of the little white roots. I believe the stronger flavors are within the white part of the scallions.

Me personally i would use a combo of alternating sharp cheddar and swiss and instead of poppy seeds minced garlic. Also along with the green onions i would add diced roma tomatoes. just add them on the second cooking.
I make something really similar to this. I use a homemade sourdough loaf and use gruyere, parmesan, and swiss. Instead of drizzling the butter I mix garlic into it and brush it on the loaf. I use chives and on the bottom of our serving dish under the bread I put balsamic vinegar, olive oil, and crushed red pepper.
Instead of pepper jack, Mozzerella. Instead of sour dough, a sub sandwich roll. And use bacon and sausage as a topping
