@deathrooster14 I'ver been over the real demo several times on all difficulties and still it's easy. It never grabbed me, seeing as I do the smart thing and keep my distance. I found it really easy. Comparable to YMIR, perhaps, but definitely not harder.

Cerberus defects because:

A) Attacked by Reapers (Most obvious choice, since Cerberus helped Shep in ME2, Reapers figured they'd go for the support structure of the hero's allies)

B) Joins Reapers b/c Shep blew the Collector base in ME2 (The Illusive man figures we're doomed without the base and joins the Reapers anyway, to be on the winning team)

C) Indoctrination in Collector base (Cerberus gets the base from Shep in ME2, makes it their new base, and promptly get indoctrinated by Reaper tech.)

To be honest i did see improvement in your gamplay from the start. One thing you have to realize is weapon selection is also important since different weapons are weaker/stronger against different types of defense. Also knowing how to use squad abilities in certain situations helps as well
