One question - my marsala sauce is yielding pretty low volume - enough for maybe 2 servings. Definitely not enough for the 8 triangles of tofu. Any suggestions? Is it just a matter of cooking down the wine and soy creamer a little bit less, or is this the kind of sauce you have to make in small batches? Thanks for any tips!

I tried this tonight... it was alright. I cut the recipe in half and used just a normal sherry instead of marsala because I didn't have any and let it marinade for about five hours. It came out super soy-ee. If I had use the marsala will it tamed the soy taste down a bit?
I wish I could go to your restaurant but I live in L.A.. I may be in the Portland area in the near future and I will definitely stop by. It's very cool of you to share your recipe with us!
