First time I tried, I beat it on high speed.... and it became butter :( Second time I tried, I beat it on low speed and I managed to get it to reach soft peaks. Because I wanted stiff peaks of whipped cream, I beat it again for a few seconds and noticed that it was beginning to clump up (as if it was turning into butter again). Any advice on what I am doing wrong?
I make my 3,2,1, sugar free whip cream about the same. The ingredients are 3 cups of heavy whipping cream, 2 cups of Splenda, and 1 teaspoon of vanilla extract. I put all the ingredients into a bowl and whip with an electric mixer till it peaks then put it in covered container and into the fridge. I have also used banana and almond extract for a different flavor. It is very yummy and can be used by diabetics and to cut the carbs on those sinful yummy's we like to eat.
@Msallaboutrko Yes, you can make the whipped cream without vanilla extract. It is used to add a vanilla flavor to the finished product, but the recipe will still work without the extract :)
