I really like your recipe. I did a few modifications to hit my taste though :)
I uses a little bit of lemon juice instead of vinegar and I didn't let the caramel go too dark because I don't like it when it gets too bitter. I wait until it gets an amber color and take it from the heat to get an bitter-sweet flavor <3
I was looking for caramel recipe yesterday and watched at least a dozen videos, alas they were all American producing what I would call toffee or fudge rather than caramel.
You used lemon peels - does lemon juice do the tric instead of vinegar?
Hi, Thanks for the comment. The vinegar helps to stop the caramel from hardening too quickly or you wouldn't be able to pour it in the moulds. I'm not sure if lemom juice would work, I must give it a try!
Gee, I'm American and I've never seen or tasted ANY Flan or Creme Caramel recipe that produced toffee or fudge, as the topping. Just saying.....and I just knew those arms couldn't go with that beautifully soothing voice :) but then you never know!!
I failed... I tried to make this for my Mom. I used fructose because she's a Diabetic, but i put in too much vinager... Luckily i made two portions of it without the caramel, and she kinda liked it:)
It has holes :( its never supose to have holes in it.You always suposed to remove the bubble with a napkin. But i love the recipe because i've been looking everywhere for this recipe. thanks
I love you're accent! Where are you from? You're video's are so fun to watch! I'll have to try this one out. As a young cook I'm nervous but I think it's worth it. Came out great :)
Would it taste any different if you excluded the lemon peels?

@vbRose17 You shouldn't really notice very much difference without
the lemon peel.

it must be very bitter... because of the very dark caramel..
fairyyyyuen 2 months ago
@fairyyyyuen Hi! no, it's not bitter. It contrasts quite well with the sweet. You can also leave the caramel on the heat less time so it's lighter.

just to give some tips here....
to prevent holes:
1)u have to remove the bubbles using napkin. Or...
2)sieve the batter before u bake it. And...
3)do not stir the batter vigorously.
i prefer greased the container first to make the batter easier separate with container. i hope u understand what im tryin to say here...

Nice video,..although the caramel is burnt and youre not supposed to stir it at any time,,as it causes crystalisation.
