  • DO NOT add sugar to this brine recipe, or that 500 degrees for thrity minutes part, WILL cause the turkey to brown MUCH more than one would like. I found out the hard way.

  • In regards to Turkey time. Notice he has a very shallow pan and the entire turkey is above the pan. if your pan is deep and your rack keeps part of the turkey below the pan then it will take much longer to cook. Maybe 1-2 hours depening on thickness of the pan (the pan is reflecting the heat away)

    If you get a ton of smoke when you do the 500 degree roast then next time or this time you should pour 2.5 cups of water into the pan

    going to be shocked....this will cook faster ....last 2 yrs my 19 1b turkey was

    done in approx 3 hrs!

  • I did this recipe a couple years ago. I came out great! The turkey was picked clean by everyone, not a drop of gravy touched the moist breast meat!

  • YESSS...used this method last year after brining my turkey overnight and the turkey was THEEE BESSST TURKEY EVER!!! Full of flavor (WITHOUT seasoning it after brining, of course)and sooo juicy some of it even melted in your mouth. Hence I am a victim of my own success...I've been unanimously nominated to be in charge of the turkey every year now (and we have a big family!). LOL! THANKS ALTON! YOU ROCK! :)

    ps. Didn't exactly follow his brining recipe. Had my own, but sure his is great too. :)

  • How long did it take to cook? I've got a 14lbs. bird like he's got in the video, but I almost can't believe the 2 hour cooking time that he claims.

  • I didn't believe it either. I had a 14-almost 15pounder too and believe it or not, it DID cook in about 2hrs time...I left it in for an extra 10-20mins anyway (before even checkin' the meat temp) just because I was nervous that 2hrs was too short. It still came out perfect...I think the brine had a lot to do with it too though. Are you brining? I live by brining now! lol

  • they have become increasingly common. check the home section at WalMart. you could, of course, go to Williams-Sonoma but you'd be paying easily twice as much. they're extremely handy, i can't possibly recommend them enough!

  • I love his show because he gives great explanations as to why you would want to do things a certain way and this video is no different. Cooking turkey seems to allude many but this should really make a different for all of us.
