I have a 1959 Cadillac El Dorado Biarritz Convertible stored 30 years, needs floor boards, has little rust on drive side fender near rocker chrome, Interior is there but bench seat was covered over not sure whats under seat, rear seats look good, car is complete and I have extra bumper asking 45k

NEVER remove a convertible from the chassis without welding the doors shut and making a x-frame in the compartiment. Now you have bend the whole car This car will never have the doors close correctly any more.

I gotta admit, if there is no rust, I wouldn't restore the exterior (sept for teh light). This car has a certain appeal in that state.
