When you start an online mode, put a few private slots in so you end up hosting and not joining someone else's game, you will then have options on the side like show names, friendly fire, police on or off etc

Its not down to the ps3, its down to the game and quality of headset, this video was done afew days after release so a patch has been released, it also depends on the quality of the mic on headsets that ppl use.
