@fidro10 Errata corrige...no pancetta but "Guanciale" i used the English term "bacon". and "guanciale" is'not like a pancetta. the pancetta is a part of the belly of the pig while the guanciale is a part of the cheek of the pig...

Our carbonara in england is the same as yours in the states. remember in italy they cook different in every region, so he is cooking a traditional italian one, its just not the one we know... its the same with bolognese, minestrone, and lots of other italian dishes. we only know the one we do in our country but in italy they make it different everywhere.

That was amazing. He was seriously cooking and the dish looked amazing. Dave does this every time with every chef. It is like this middle America, I'm an idiot from Indiana clown act. It isn't meant to be condescending. Dave's mother did all of the cooking.
@eqsmooth Dave's a big boy now though and if he had middle America's best interests at heart, he would let Jamie teach them something worthwhile without wanting the attention.

@beertron7 Dave always goofs on the chefs. He is very consistent. I've been watching since high school. Jamie is quite the chef as are many of the guests but Dave thinks it is hogwash. The chefs don't care because they are on American television getting exposure and promotion. When he dipped his $200.00 tie into Nigella Lawson's fish frying oil I almost spit out my shot of balsamic vinegar.
actually drinking a glass of olive oil is a great way to aviod getting drunk on drink-a-thons.
unfortunately, instead of hangovers, you get a blasting d arreha the day after, since the oil wraps up the intestine and prevents the alcohol to be absorbed, along with all the rest there is.
That was exceptional, as a segment and as testament to Jamie and David's ability to co-exist and entertain...all while cooking a dish I'd struggle to make given hitherto instruction and guidance. :)

Funny on Mr.Letterman's part,but the idea of drinking behind Oliver's back and summoning Paul for a drink is very distracting. It's difficult for the audience to get the recipe. Disrespectful. Oliver was working hard there, man!
