I just did it at 2:20 and killed off my team members so they don't kill the drivers on the Choppers, I used a trip mine that i picked up from a small building at 2:55, but i used the assault rifle to damage the Chopper a little to make sure it would explode and i just threw the trip mine in from of it and bam =]

an easier way is to use one of those big yellow plasma cannons and shoot the bike once then when it drives real close to the mine shoot at the mine. took me 2 shots
