But...but THE MEAT POUNDER WAS A UNITASKER!!!! And the only way he justified it was by saying it could be a paper weight. A fire exstinguisher could be a paper weight...ehh...I still <3 you Alton.
I just made my first batch of homemade donuts. They tasted better than store bought donuts. Plus I saved about $8. Which I would have usually spent for a dozen donuts & donut holes at my fav donut shop.
For those that don't know when she mentions "A Neilson Family" at 6:30... what she means is that the family is one of the small portion of american families that submit data for the Neilson ratings system, which determines what shows gets to continue being shows and what shows ... don't.
I literally JUST made these with the chocolate glaze, and they are unbelievably delicious. This was my first foray into deep frying, and it's super satisfying. Non greasy food, and amazing flavor!
Besides confusing the Pennsylvania Dutch with the Amish, he also confuses the Pennsylvania Dutch with the people from Holland--the Pennsylvania Dutch are actually Germans--Dutch in this case being a mispronunciation of deutsch which is the German word for German.
"Nielson Family" is a referenece to the Neilsen ratings, which determine if a show can stay on American airwaves or not. If your show has low ratings, the show is "sweeped" or taken off the air. A high rating not only keeps the show on the air, but also attracts the attention of commerical sponsors who pay millions of dollars to hawk their wares during the show's breaks. More sponsors = more money for network and studio. Anyways, Alton is trying to appease the Neilsen peeps with donuts.
now good eats is my favorite show on tv but one thing bugs me, he never guves the volumetric conversions, alot of people including me dont have scales as a practacality issue, he always weighs and never gives the conversion
I wouldn't say he NEVER gives the volumetric concersions, he just gives them very little. The only time i remember him giving a volumetric conversion was when he was making blueberry cake. But I agree, he needs to give them more often.
indeed this show is sacred, for it was alton who delivered me from a life plagued by culinary ignorance and bland food. Accept his heavenly influence in your life, and you too may know the heaven on earth that is....
Do not say you douchebag when the top chef here is named Brown.
That out of the way, you're right. This show is a guiding light to poor bastards living alone who need cheaper ways to a great meal and fulfilling the void in their existence made by a diet of ramen and cheap coffee. But now that i know how to make shrimp ramen pouches, french onion soup, and cheesecake, my life is once again worth living.
...
At least until i get writers block and can't function until i recover.
hm, i'm a bit disappointed in alton. You're never, EVER supposed to twist biscuit dough when cutting. My aunt and i have been making biscuits since i could hardly reach the kitchen counter, we've tried it both ways and believe it or not twisting does make a difference. not twisting actually makes them rise a little higher, though i don't have a scientific explination for it.
mmmmmm..doughnuts.. I love doughnuts I've always wanted to do some by me self. Really didnt know that Alton Brown already made an episode for it XP thanks ! and thanks LTH for sharing :)
If you've ever watched the Colbert Report, then you'll know that Stephen Colbert grew up in South Carolina, and he taught himself to speak without a southern accent because people with southern accents are often depicted as "stupid". I guess you can lose your accent if you really try!
I love his pop culture references :)

Size: 6" x 4" x 2"
Whats impractical about that?

I think the rising has more to do with *what* you cut it with. Alton mentions in his book never to use a glass to make biscuits.

Jelly doughnuts technically aren't doughnuts. They need holes to be a true doughnut.
