Gul-posh, ayat, chaan, firdaus. taaviz, zabaan, mehke, imaan, naghma, kalma, misaal-e-os are words Hindi speakers would not be familiar with, but that doesn't mean the rest of the song isn't in Urdu, because each and every word of this song is in Urdu. The lyrics of this song are from a poem by Bulleh Shah, a Sufi poet; not written by some Hindi lyricist.

The "Dil Se" DVD sold in India and the United Kingdom says the film language is Hindi and it's natural for people to assume the song is in Hindi too, but a similar example is the popular French poem/song English speakers learn as kids called "Frère Jacques" and a Latin Christmas song called "Gloria in Excelsis Deo".
