The suden release of brake or chopping of throttle can cause an instant regain of traction. The regain of traction will transfer the RPMS to the rear at a rate traveling faster than the front end, basically causing the rear to fold and jump. The result to an unlucky (unskilled) rider is a catapult over the highest point of the bike, hence the term "high-side".
