@LietMonty The stuff lasts forever in the fridge. You can really store it at room temp for a long time, but storing it in the fridge means you really don't have to worry about spoiling. Since you boil all the milk solids out of the butter it essentially makes it like bacon fat. Keep it as long as you need.
