  • There re too little video even for youtube to show the proper way use a knife. 90% of them were like, hey look at me and how fast I can go, how sharp and expensive my knife was. Thanks for the great video.

  • The cutting is on the forward (pushing the knife away from you) motion, not the return (pulling toward you, tip touching board) motion. So the argument that this is wrong because his knife isnt in constant contact is a flawed one at best.

  • its weird because i've never looked for gyuto style knives before, but they always show me these videos. i'll look anyway. i wonder what this man is doing? only the tip of his knife touches the board in his demonstration at the end. is it his desire to only cut through half of his food? that would not go over well, i think.

    there is a certain rotation motion you make with your arm that still slices the food (not chops it) and it is covered well in many videos. this is not one of them.

  • @Blightmouth I understand what you're saying but this way was actually how my teacher also taught me to do it too. I guess you learn the basics and change it to the practical movement.
