Siphon Coffee at Intelligentsia Coffee at Atlanta trade show

I have been watching many demo videos on here on brewing siphon coffee... saw one guy take an ice cube and rub the bottom part of it as the coffee went back down into the bottom chamber... was that for just cooling down the coffee you think?

this guy puts the coffee in after all the water is siphoned to the top? what, they want to be different? the reason you put the coffee grounds in before the water start to siphon is while the water is in the process of siphoning, the coffee gets to bloom and steep.  this guy has no clue.
