To prevent yourself from getting lost you should put your torches on one wall when you leave your base. If you put your torches on the left at all times the way back to your base is always with the torches on the right of you. For large areas just be sure to place the opposite wall on the floor. That way you will never get lost. when you see torches you already placed, just make sure that you don't mix up your directions.

the chickens are spawning on the excess dirt. the only requirements for them to spawn is dirt with high enough light level. It doesn't have to be on grass.

Something you might wanna know, you can make a 9x9 square of dirt, replace the middle block with water, and use that as a farmland. it seems a lot more efficient way to use one block then what you're doing. it gives you 80 blocks of farmland per layer of it you do.
