I think the inventors wanted to demonstrate the sensor technology to actually move the hand, but made the hand like a claw because that's how most prosthetic hands move like. As for individual fingers, I'm certain they could have figured a way to add additional sensors to do that kind of function, but I think their university had enough funding to just make that hand simple enough to grip a fragile object.
