I think that by and large, if you're teaching a recipe this is a good format. But if you're teaching a cooking technique, the traditional slower talking videos are better. I think both formats have potential, and you should use each according to their individual merits.

Chef Todd, I've been following you for a long time now and I love your videos and admire your unique style in it. I LOVE your voice in the vids, that's what makes them interesting and funny to me! So, I'm sorry, but I'll have to say 'NO, NO, NO' to this experiment. I agree with Guitarfool5931 that a mix of talking and music would be a better balance perhaps. :)
@sensangsun - It's RAW rice in the Seafood Paella. The idea of the one dish dinner is that the rice absorbs the liquid of the stock, tomatoes, and other ingredients and cooks at the same time.
Chef Todd. Maybe you can do something where you balance yourself talking AND the music you like somewhere in the background. I do like the way you explain things when you do talk on the videos. If you need someone to mix sounds for you drop me a line. I have a pro tools rig at my house and would gladly do it for you. Keep up the good work! :)
