I know how to do this glitch

1. Play Red Dead Redemption for awhile

2. Kill the horse you have

3. Call for another until you get a Deer, Elk, Dog, Etc...

Just kill the horses you call for until a Deer, elk, or dog (Etc.) Show up it'll take a while but you will end up with a wild animal or dog mount :D!
