@nadkun You have to fry the rice until it looks a bit dry. Usually you can tell if you see some of the rice to pop up by the heat and it doesn't take long (do not overcook it). However, soggy fried rice is also disgusting.

家庭用コンロだと鍋の温度を高温に保てないので、卵とご飯を次々に炒めると温度が足りずにベチャっとしてしまいます。特に卵を炒めるときは鍋の温度がぐっと下がります。一方この動画では、卵を一度取り出して、鍋を高温まで熱してから炒めた卵とご飯を投入しているため、比較的鍋を高温に保てているのでパラっとした炒飯が作れるのだと思います。他の食材に関しても同様で、あらかじめ別々に火を通しておくと、最後に合わせて炒めるだけである程度パラパラ感のある炒飯が作れると思います。ご飯は一度冷凍したものを解凍してますよね(おそらく動画中で聞こえた音は電子レンジのアラーム)。家庭でパラパラ炒飯を作る秘訣の1つだと思います。
