It's a jet engine with an afterburner. Fuel dumped into the afterburner and lit off while the engine is only spinning at a low rpm makes fireballs. The afterburner is lit again while the engine is spinning at high rpm to propel the car down the track on a 'column of fire', so to speak. Like a fighter jet.
