if you want a little more toast on the top before taking pizza out just lift it up with your pizza peel and hold it close to the top of hood where all your heat pools and keep there for desired bubble and burn. :p
make a pizza dome for the largest big green egg. Also a rotating stone deck. You can use hickory wood or coal in the egg with 800 deg. heat. The best pizza made. It will be a home run.
@kim621100 Have you done it? My experience with pizza on "the Egg" is that with the XL Egg, the largest the charcoal / fire is much closer to the stone making the bottom burn more easily than with the Large Egg.
@fredsmusicandbbq I put the coals on one side. If you do not pay attention, it will burn to a crisp. I use wood so the flames lick the top of the dome. tricky but it will work.
If you are looking at a Beefeater look at the Signatures. Much better built than the Discoveries and still made in Australia. As an owner of a signature 3000S I can tell you that they are good. With the Stanless steel cover it handles the Christmas Roasts (Remember Xmas in Australia is in the middle of summer) with ease.
