  • Nice job! Love the fact that you're using just 2 ingredients and no electricity. So nice to be able to have homemade food with the preservatives and who knows what in it.

    I have a love for pasta and pastamaking - its become a science to me. When I make it though I don't use regular flour - i use either what we call durum-flour or an italian flour called tipo 00. What are your thoughts on this ?

  • I have some questions. What's your opinion on using oil. I've seen recipes that call for it and some that don't. I noticed you didn't use it.

    Also, Does letting it rest at room temp differ from letting it rest in a fridge? Again I see some techniques that say refridgerate and some that don't!

    I like making handmade pastas and nothing beats a well-made pasta. I've added lemon zest and dill to my dough too which makes a beautiful refreshing pasta. Or pepper and parmesan. There's no limit.
