I make this regularily at the restaurant I work at and I have to do it quite a bit diferrently mainly for presentation purposes. You can't really plop a sloppy pile of potatoes on a plate when the customer is paying nearly $40 for the main course. Same basic recipe, but I use eggs to tighten it up so I can cut them into triangles, gruyere cheese on top for flavor and also that golden brown cheese color on top and very thin sliced potatoes. For home cooking I would surely do it this way though.
