@JoEmily744 The only change I've made to the recipe is that I use an apple corer now and don't plug the holes up after filling with cheese. The batter does a good enough job of holding the queso inside. Also it makes a bigger hole than I was getting with the knife, making for a thinner and crispier potato. Also I make sure to smash as much cheese inside as I can.

These are awesome! We made them without peeling the skins off the potatoes. Next time we are going to put some bacon bits in with the cheese...mmmmmmm!

I actually have switched to using an apple corer to punch a hole all the way through the potato. I don't bother covering the ends, just pack it full of cheese (and these days bacon) and then dipping it in batter and they stay together pretty well.
