(Not exactly sure but my theory on it) From what I have seen, it seems that the Death Knight's were real people per se. When the Lich King killed people, they became apart of his army. He then decided to make ultimate warriors of the undead (Death Knight's) and you basically play as one of the "warriors" but your memories have been erased.

I wish Blizzard would release a book that's like "I know we contradicted ourselves a million times in our 'lore', but THIS is the authorized honest to goodness story about everything" lol
