  • Keith, baked Ziti is VERY Italian. It's served using buffalo cheese and not so much meat. Commonly, it was baked for weddings; it fed a lot of people for little money. My mom used to tell me stories about grandma making it for her friend's weddings before coming to America.

  • I hate when cooking videos don't show what the finished meal looks like on a plate... It really helps us figure out whether thats the kind of consistency we'd like. We only see how this looks in the pan, and everything looks great sitting in the pan, including Sbarros' baked ziti which doesn't taste good at all, just looks yummy.

  • I've been making this dish for about a year and it is a favorite in our family. Sometimes i add a couple of sliced chicken/apple sausages. Now, my daughter is in her first apartment and called (texted) to ask me to find the utube video where i learned to cook Baked Ziti. Here it is - a second generation begins. . .

  • Too much cheese, and being that I LOVE cheese that's saying a lot. There's such thing as too much of a good thing. In addition, why even bother with whole wheat pasta if you're just gonna dump on a pound of cheese on top of it? It's like washing down a Big Mac and fries with a diet Coke. Making it diet won't change a lot. Besides, whole wheat pasta tastes like crap.

    Also, that's like at least $10 of cheese right there. Parmigiano-reggiano is like $15 a pound!

  • @kommisar 1( Buy a bag of Italian-blend shredded cheese to use. Usually it includes parmasian and mozzerella in the mix already. 2( Use regular penne. Most stores have a generic version, so that'll cut down on cost as well. 3( Use a bottle of your favorite ready-made tomato sauce. I tend to toss in some herbs and spices to make it taste more home-made.

    I made mine this way out of necessity. It's quite tasty, and costs about $8.

  • Yeah, that's pretty much how I make my ziti, minus the herbs sometimes. I was just pointing out how expensive this dish is. The sauce and pasta are cheap, but the cheese costs a fortune when you factor in how expensive good parmesan is. The amount he used in the mix step was reasonable but then he doubled or tripled the amount during the layering step.

  • I also wanted to point out the futility or insignificance of trying to squeeze in "nutrition" in the form of whole grain pasta when the dish consists of about a pound of cheese.

    However, nothing is wrong with the flavor (and texture) of good, restaurant-quality ziti!

  • Good dish, but who are you kidding when you say it is healthy? Whole wheat pasta is heathier than white, but it aint healthy at all. And tomatoes that come to a boil is cooked which has lost its enzymes. Salt is toxic too. But hey, we still like our addictions that cause heart attacts and cancer.

  • I'm Maltese and grew up with lots of Italian dishes in the kitchen. I would never ever prefer whole wheat to white pasta ever. The extra carbs are worth it with flavor, but I guess all the cheese kills offsets the flavor it would with a regular dish like spaghetti.

  • i am about to cook baked ziti now. thanks for the tips, but I don't know if I'll put that much pepper in mine lol. Is it a good idea to add sugar to the marinara sauce? anyone know?

  • taste the sauce first. if it is too tangy, you can add some sugar in a pinch, but I like to take some chopped carrots and cook them up in my sauce base instead of sugar. It is healthier and more flavorful than cane sugar. look up soffrito on wiki--it is carrots, onions, and celery.

  • that looked great...here's another tip...don't just use a tomatoe sauce...add ground beef and sausage to the tomatoe sauce like you would do a lasagna...it's' really good

  • wow, that looks like a great recipe!! i remember i had to do this at a restaurant where i worked at before. Though it may not have been quite as fancy and exquisite as yours (simply just penne, marinara sauce, ricotta and mozzarella cheese, and a few meatballs) it was still one of our most popular pastas. I know this'll be at least 10x better.

    i'll make sure i'll pass this video over to my ex-employers!
