I like alot of Cajun recipes and used something close to this myself, I would probably get some slap yo momma and mix it with some of that chicken rub full of MSG and folic acid. But usually Im a buttermilk and flour kind of guy.
Cajun wife you really are the greatest...your fried chicken recipe is my favorite and i recommend it to everyone and direct them to your vidioes.....your the bestttttttttt
Oh, and I know that Creole isn't Cajun...I'm just missing the foods from back home. And few up here in PA have had real Cajun food...esp. not in restaurants. They think "hot" and that's it. Shaking my head. Think I'm moving lol.

I could only find a Kentucky Flour Mix because I live in Southern Indian, but I flowered using your recipe using salt/garlic powder/pepper and marinating the chicken in water with the KY mix and also added some milk instead of all water.
My iron skillet is large by standards but not like yours, so I fried 1/2 chicken at a time for 13/14 minutes.
This is the best fried chicken that i have EVER made...
What that's nice, I don't know what to say! I'm glad you were so creative with the batter, good job! I take advantage of all of the cajun products they have down here because (like for frying) it's easier than mixing up flour and/or corn meal. I found a brand I like, and you know, add more seasoning...
If some of those products have websites please include them in your videos. I live in Houston so I can get most of the cajun products but when I visit my yankee relatives they get no cajun products. My stepmom brags about her gumbo when she mentioned tomatoes I cringed...LOL! I can't live without cajun food.
Having moved from KS to PA, I'm regretting it lol. I got on this Creole kick and now can't even find the products here. KS has lots of Creole foods. Some of these folks here don't even know what Creole is. Ayyy.

Dutch ovens are universally bad ass. Ask any traditional Texas cook.
But dont feel down and out, PA has its own local food, so I doubt they worry about Cajun cooking that much. Now your in the home of the traditional super fatty cheesy philly steak sandwiches... they have some bad ass deli food there too. But that far north no sweet tea... hell they probably didnt have that in KS.
Now in Chicago they have an italian meat sandwich but its no cheese and spicy.mmm..
Hi Laurin, Aaahh I see, crayfish. We have native crayfish over here too, but they are being eaten by signal crayfish, which is seen as a major pest. As such, we need a licence to go and catch them, as there are worries that the signal crayfish will get out of control and kill all the native fish. I've had them (farmed) before, and they are dish-delish!! You must do a video of the Breaux Bridge festival, and tie it in with the best recipe!!!
Trust me I'm old enough! I cooked this for lunch one day but It wasn't ready 'til one o'clock so the inlaws ate a sadwich but they called for chicken in the afternoon and sucked the bones...

Imagine dipping some fried chicken into some flavored sauce...but having the sauce injected right in...it came out pretty good, I fried two fryers and there was nothing left (by the end of the day)...I'm going to fry chicken again, try something new...I fry alot, I'll be frying some stuff from the pond. Bass, Bream, Catfish, yum yum - we are having a crawfish boil in April - that will be a good vid!

Oh my gosh you dont know what crawfish are? (also crayfish) Well where I'm from they are the most popular thing to eat, seriously. They are mudbugs!! We boil them (outdoors) or peal them and cook them other ways, see my crawfish etouffee video! You're going to see how much fun it is when we have our crawfish boil! There's a big Crawfish Festival every year in Breaux Bridge, Louisiana. I guess I'll have to go and do a video for it...no doubt there will be some good Cajun and Zydeco bands!
I used vegtable oil in this video, sometimes I use canola oil for fish, or if I'm frying outdoors I'll even use peanut oil but it's a little more expensive. Thank you for the nice comments!
