great vid, thanks! just wondering if you make and store raw seitan in bulk and cook later? if so do you freeze it? or would you not recommend this? i'd prefer to do a load of prep say in one go and cook it as and when i like. what do you think? thanks
I froze seitan for a week once, just to try it out. No problems at all :)
If you make larger amounts, keep in mind that you will need to be able to handle the dough - the bigger your hands, the bigger the portions you can make.
I've been making wheat-meat nearly 40 years. Why are you fooling with it by hand? Mixer kneading is faster, cheaper and more efficient. Maybe not as romantic, but so what-
It takes me no more than 5 minutes to knead the dough by hand. Nothing romantic there for me, but I'm glad you view it that way :) The fact that I'd have to buy a mixer aside, I don't know if the overall process would be faster.
If you use wholemeal-flour, the gluten will probably not bind after you have washed out the starch. I guess the fibre prevents it from binding. Wholemeal-flour never worked for me.

I cut my fresh seitan lump in steaks and then thinned them to be 2-5 mm thick. Then I put them in stock and ended up with "real" chicken brests, big and ready to roll. Thank you once again!
Just followed your instruction to the letter and ended up with THE BEST MEAL EVER! Used the same garnish too and it was all perfect. Thanks for the teaching. :-)
Great tips! I always thought you had to wash it untill water came out clear and did find the texture quite rubbery. I will try it your way and see how it turns out.Thanks!
