There is a glitch in the game you need to the main menu to my wwe to match rules, and turn dq, give up, ropebreak, and ring out count on, when these are off it won't work the glitch affects this match for some reason

if you make the stfu you have to move your right controll stick like in a normal submission move just hold it in one direction and keep it there then he should give up

use the stfu you can do this with when you have full finisher and then go to his feet when he lies on the ground. press triangle and he does the stfu then use your right analog stick like in a normal submission move

you have to press the right analog stick in one direction i forgot if it's to the side or up/down but it's definitly the right analog stick when your opponent runs towards you...
