@bmak8690 A different take on the pancake isn't it? We enjoy them too. Been in the family as long as I can recall. I am happy you enjoyed it! cheers from KtC!
@mcvickerf Yes, about a half minute after the batter hits the hot pan so that a bit of crust has formed on the bottom part. Then fold over as you would an omlette. The lid on top will cook everything through but keep the heat low at that point (I just lower to med. right after adding the batter).
I am a one pan pro if I can get away with it however, folks might find it easier using two pans (prep. the eggs, bacon and use another pan for the pancake part). cheers! KtC

@MrGoandgetstuffed Cheese (real cheese not preserved) and Bacon are good cholesterol, flours and oils are bad. You body craves natural fats. Man evolved eating meats and milks. Flours and oils are super bad if you have them in moderation though. What really happens is your body absorbs the food and stores it as fat, and flours/oils falsify those effects because of complex carbs and your body stores them longer and prevents more from being absorbed.
@Bralor89 No cookbook yet, but I have all these recipes I have to keep somewhere. Perhaps a book in the future. Thank you for your comment, I appreciate it! cheers KtC
