I just made 100% whole wheat old cheddar cheese hamburger buns and got a bad recipe on the internet and didn't proof the yeast, don't know if it's going to turn out it's been over an hour and nothing is happening.

Post Script: I got the yeast from a local baking specialty store here in NYC it came in a plastic tub. After 10 hrs of waiting the loaf finally rose enough for baking. The loaf was very dense but had a nice flavor. I baked it at 375 x 30 min. Needed about another 5 min. I Guess either I did not proof long enough or the yeast was not very active.
First of all thanks for the EZ to understand video. I tried to make a loaf. I proofed the yeast did all the rest then the dough would not rise very well in the first stage after 55 min it barely rose. Then for the second rise it seemed to just stand there frozen without rising. What else could I have done wrong? My kitchen in 71 F is that too cool?
@wwglox Thanks for watching. I'm not sure what could have happened to your dough. I'd guess the yeast wasn't very active. What type of yeast did you use and did it bubble up much when you proofed it? 71 F may be a little cool or there may have been a draft, also I don't know if there's a difference in rising time if you live above 5000 ft (like in Denver). I do hope you keep trying. Good luck.
Also homemade bread doesn't have all the preservatives and additives like commercial bread.
I was told that oiling the plastic also helped to stop the dough sticking to it which is true enough.
1 warning though, no matter how tempting the smell of just baked bread, if you eat it directly from the oven, you can give yourself a really bad stomachache! lol

I learned to make bread from this video and it's wonderful. I did have trouble getting it to rise on the counter, I think because I keep my house cool. I took a small dish of warm water and put it and the bread (in loaf pans) under a plastic tub to rise the 2nd time and it worked great.
@maxgunn555 If you can buy fresh homemade bread hot out of the oven in less time that it takes to make it, then go for it. So, do you spend all your time making money?
My mother taught me how to make bread from scratch...25 or more loaves at a time. She eyeballed everything, just as she had been taught. It was hard to scale that down (I don't have room for an industrial size freezer like hers!). However, you've solved that problem, and so very entertainingly as well! Thank you!
I have a question, when you put the dough in the bread pan to let it rest and put the plastic wrap with some oil, is that to make the dough double its size? like the first time you put it in the bowl? because i didnt put the plastic wrap and it did not double like yours
@milagros104 The plastic wrap and oil are just so the dough doesn't dry out and form a crust. I suppose if a crust forms it might not double properly, but I'm not sure. I'm glad your bread was tasty. Keep baking!
@AFateSoTwisted Yes. I think that if you roll it out after the first rise, maybe about 1/2" thick into a circle maybe about 14-16" round, then cut it into wedges, how many will depend on how big you want the rolls. Then roll from the wide part to the point of each wedge so the point is on the outside. Let it do it's second rising and then bake. It won't need to bake as long but I'm not sure how long you'd bake it for. I've seen my Mom do it but I haven't tried it yet. Check online. Thanks
@AFateSoTwisted If the water was lukewarm & there was no salt in the water/yeast mixture, it should rise unless the yeast is dead. Sometimes it takes a while, but if it takes longer to proof it will take longer for the bread to rise. I'd try again with a fresh bowl, fresh water and room temp yeast (frozen yeast can bring the water temp down). If it doesn't work that time either, the yeast is probably dead. Then you'd have to throw it out and buy more. Good luck.

I have a question: is there an upper limit to the time required to let yeast proof? I've seen recipes that call for as much as 45 mins (although the 15 mins you advise seems to be the norm) so I'm guessing it's pretty variable. Is the bubbling the only way to know when the yeast is ready? The active dry yeast I have doesn't really start bubbling till about 20 mins.
@PullTheTrigger55 I'm not sure about that one. You may want to look online. I've read that you can freeze pizza dough but bread dough doesn't do as well. I haven't tried it. One suggestion i've seen is just to make extra loaves of bread. But, you should probably look online. Hope you have fun baking.

@fistum1 That's about right, I guess. Waiting for the yeast to proof, mixing the ingredients, kneading the dough and then letting the bread rise twice. About 3 to 4 hours is good. I'm glad you like the recipe. Thanks for watching.

what should you do if your bread doesn't rise. never have i been able to get it to rise before the baking in the oven and i have made bread 4 or 5 times already. any help with this???
@awolvesdestiny I'm not sure what your situation is.. There are a lot of factors, like whether or not the yeast is fresh, the temp of the water - should be lukewarm, no salt in the yeast/water mixture, etc. If the bread doesn't rise it probably has to do with the yeast. You may need to stick the bread in the fridge overnight and see what you've got the next day. If the yeast doesn't bubble up in the water after 10 minutes you may just have a bad batch of yeast. Keep trying. Good luck.
@SorceressKana Yes you can bake it at 350, it will probably just take a little longer to bake. Keep an eye on the color of the loaves to figure out when they're ready. Thanks for watching.

I've been trying for a month and almost gave up. But this was perfect. I used a bread machine for the needing; I don't think I needed more than 2 cups water with the machine doing the needing.

Dear please explain tge baking temp as mu electric oven shows 250C as maximum.does it mean i cannot bake the bread in it or the temp u mentioned is in Farhnheit 350F for the said time ......... waiting for your advise

@ac55699 Yes you can. I've never done it, but aparently with instant yeast you just add it to the dry ingredients. There's no need to proof it. Read the directions on the instant yeast package and see if you need to adjust anything else, like water. Thanks for watching.
@TheNerds3 Sorry for the laate reply. Yes you can use different sized loaf pans but you may get different results. You'll either need to adjust the recipe or put more or less dough in each pan depending on whether the pan is larger or smaller. You may also need to adjust the baking times.

It is possible to refridgerate dough overnight. I've never done it, so I can't give you any advice. Yeast will continue to rise even in a fridge. I'd do some research first if I were going to try that. Good luck.

I'll try that, I've also seen that Publix sells pizza dough in a plastic bag, so it should definetely work UNLESS there's some preservative to be added in which that case I will not do it because the beauty of making your own food is to avoid the poison restaurants and supermarkets and food companies put in the food.

Wheat contains a protein called gluten. When you knead the bread the gluten helps form the texture that we love. The yeast and the gluten together help make those nice little bubbles in the bread that help the bread rise and become light and fluffy. It's very important to knead the dough well for about 10 minutes. I don't know what you would get if you didn't knead. Probably a brick. I'm glad you liked the video. Wheat has a protein called gluten. With kneading, it changes and develops into something useful for making bread. We help the gluten and yeast develop those little air bubbles and that great bread texture we love. If you don't knead for about 10 min, you may end up with a brick. You can see in the video how smooth the bread was after kneading compared to before I started kneading. Gluten is doing its thing. Do some research before using different flours. Proteins vary between grains.

There are many different whole wheat bread recipes. I've made 100% whole wheat bread once and it turned out like a brick. It's too dense. Best to try 60% whole wheat and 40% white or half and half. You would use basically the same ingredients but I haven't tried wheat bread enough to recommend a good recipe. Have fun experimenting.
The oven isn't on for the first rise, it's just draft free & room temp. As long as the yeast is good the bread will eventually rise, it may take more than an hour in a cooler place. If the dough doesn't rise at all, either the yeast was no good or perhaps the salt got to it. Have you proofed your yeast? If it did double or triple in size and thicken in the warm water in ten minutes, then it should be good. Add the salt after mixing in about half the flour. Hope you try again. Good luck : )

Have fun with it. If you freeze the bread, it'll be easier if you slice the entire loaf and store two slices per freezer bag so you can just pluck it out of the freezer and pop in the toaster, or leave on the counter wrapped in a tea towel (minus the bag) for about 20-30 minutes to defrost at room temp. Not quite like fresh out of the oven, but still pretty darn good.
Zee! Thank you SO much. I have never been able to make bread well - it's always come out tasteless and dense. This came out SO good. I halved the recipe just in case it came out bad - now I wish I had made the full recipe!

@SorceressKana Yes you can bake it at 350, it will probably just take a little longer to bake. Keep an eye on the color of the loaves to figure out when they're ready. Thanks for watching.

Wow that was great to watch ; ) Thanks! I bet your bread is Great! I wanna try that too. Can you only make white? Wonder how you can make Wheat bread. When you were make that it reminded me of that old show "The Waltons" when you seen Olivia Walton and Grandma Walton making their bread lol = ). I always remember them say "don't slam doors child I have bread in the oven" lol. I wonder if that still matters. Does it? Remembr that show? Ahww those were the days. You seem so cute.Nice Video:)

Thank you so much for giving me the courage to be able to finally bake my own bread, never thought I would ever be able to do it. Your video was fun, and easy to understand and follow along. I make this recipe literally almost every week. Nothing compares to freshly baked homemade bread, NOTHING! I just had a question, I've thought about doubling the recipe to make 4 loaves. Would you do so just like any other recipe, including yeast, etc? Just wanted to make sure.. Thanks again, your the best!

I've been trying for a month and almost gave up. But this was perfect. I used a bread machine for the needing; I don't think I needed more than 2 cups water with the machine doing the needing.

Dear please explain tge baking temp as mu electric oven shows 250C as maximum.does it mean i cannot bake the bread in it or the temp u mentioned is in Farhnheit 350F for the said time ......... waiting for your advise

@lcms101 Hi. For celcius, 350 deg farenheit is 177 deg celcius. So just set your oven to 175 deg celcius and see if that works. Good luck and have fun baking bread. Thanks for watching my video.

@ac55699 Yes you can. I've never done it, but aparently with instant yeast you just add it to the dry ingredients. There's no need to proof it. Read the directions on the instant yeast package and see if you need to adjust anything else, like water. Thanks for watching.

@TheNerds3 Sorry for the laate reply. Yes you can use different sized loaf pans but you may get different results. You'll either need to adjust the recipe or put more or less dough in each pan depending on whether the pan is larger or smaller. You may also need to adjust the baking times.

How are these pillbury dough that they keep in a conteniner ready to bake? (I stop using them because I no0ticed that the aluminum from the can sticks to the dough and we were eating that stuff) Thanks!!

It is possible to refridgerate dough overnight. I've never done it, so I can't give you any advice. Yeast will continue to rise even in a fridge. I'd do some research first if I were going to try that. Good luck.

I'll try that, I've also seen that Publix sells pizza dough in a plastic bag, so it should definetely work UNLESS there's some preservative to be added in which that case I will not do it because the beauty of making your own food is to avoid the poison restaurants and supermarkets and food companies put in the food.

Wheat contains a protein called gluten. When you knead the bread the gluten helps form the texture that we love. The yeast and the gluten together help make those nice little bubbles in the bread that help the bread rise and become light and fluffy. It's very important to knead the dough well for about 10 minutes. I don't know what you would get if you didn't knead. Probably a brick. I'm glad you liked the video. Wheat has a protein called gluten. With kneading, it changes and develops into something useful for making bread. We help the gluten and yeast develop those little air bubbles and that great bread texture we love. If you don't knead for about 10 min, you may end up with a brick. You can see in the video how smooth the bread was after kneading compared to before I started kneading. Gluten is doing its thing. Do some research before using different flours. Proteins vary between grains.

There are many different whole wheat bread recipes. I've made 100% whole wheat bread once and it turned out like a brick. It's too dense. Best to try 60% whole wheat and 40% white or half and half. You would use basically the same ingredients but I haven't tried wheat bread enough to recommend a good recipe. Have fun experimenting.

The oven isn't on for the first rise, it's just draft free & room temp. As long as the yeast is good the bread will eventually rise, it may take more than an hour in a cooler place. If the dough doesn't rise at all, either the yeast was no good or perhaps the salt got to it. Have you proofed your yeast? If it did double or triple in size and thicken in the warm water in ten minutes, then it should be good. Add the salt after mixing in about half the flour. Hope you try again. Good luck : )

Have fun with it. If you freeze the bread, it'll be easier if you slice the entire loaf and store two slices per freezer bag so you can just pluck it out of the freezer and pop in the toaster, or leave on the counter wrapped in a tea towel (minus the bag) for about 20-30 minutes to defrost at room temp. Not quite like fresh out of the oven, but still pretty darn good.
