Icom has discontinued the Pro3 in favor of the new IC-7600. BUT you're going from a $2700 (street) price tag to about $3850 (street) for the new 7600. That's a HUGE jump for many.
The Pro3 was a huge jump for me since I had an IC-718 before this one. If it weren't for tax-free status for a year I would never have been able to afford it.
You can't go wrong with either I guess. I do like having a radio I can pick up and run without a computer. OTOH, the Flexradio receiver is super cool. 73!
The Pro3 has noticeable CW DSP artifacts! Many have talked about his on the internet, especially on eHam.

Any DSP processing results in what you have described. I use the minimum amount of DSP needed to help ensure a reliable signal.
My favorite use of DSP is that it can considerably reduce band noise. That helps minimize operator fatigue during long contests.
