Part two: What they do is, first put the cold-cooked noodles in the bowl. Then get romaine lettuce and toss that over the noodles, add some julienned cucumbers, pickled daikon radish and carrot and then add the meat. After that, garnish with fresh mint, chopped toasted peanuts and fresh chopped green (spring) onion. Then comes the fish sauce, at the very end. Toss and prepare to be floored.
I realize that different families have different recipes, and don't mean to demean anyone's traditions!

Will make video next time my friends come over as they help me film :-) can you share any recipes? I love japanese food, basically I love all oriental / asian foods.
