Well after landing from a jump, you can activate your UT and absorb the essences quickly without any delay just by holding Y for a split-second.

No I think there is about 9 of them and they come in 3's

I'm trying to get the Dragon Sword achievement and this is the exact techinique I use. Just wait for him to do the charge and you can hit him with a charge up.
