It's hard to say exactly what classes you should and should not take because they change every semester and I can only talk about the Fall semester classes so far (granted if they're the same next Fall semester).
Classes to take:
Japanese Cinema
Japanese Education (if you're into learning about the school system and such).
Japanese Language and Society (if you're into learning about how language shapes society).
Japanese Business (good information and interesting, but the teacher is kind of a jerk sometimes).
There are more classes (other History classes and Business), but I didn't take them so I can't speak on them. Just take what you're interesting in and stick with it if you like it (and drop it if you don't).

its interesting you say that you feel like youre in high school again, because in japan they take high school more seriously than college (which is opposite of america). my japanese friend told me that you spend your first 2.5~3 years "goofing off" and the last 1-1.5 seriously doing work. so its not that you feel that way it pretty much IS that way ^_^.
Its sad that most of the students that we go to NUFS and NUAS (the art school) with will spend the last 2 - 1.5 years of their college lives job-hunting and will more than likely end up just working in an office, which will have nothing to do with their degrees...
It think that its sad, but since we are exchange students, our courses are a lot easier and less intensive then their classes...so that has a lot to do with it too.
