It actually wasn't very good. When you use bacon some of the fat is used in the sauce. Spam doesn't give off that much fat, so the result wasn't as good as I expected. Carbonara is such a comfort food for me I want that extra badness that bacon gives it. It was fun to try though.
lol cooking with SPAM as a substitute for another meat product is always going to be stab-in-the-dark. so i try not to get my hopes up too high. for lunch, i was curious about your version of Carbonara with garlic and onions, so i gave it a shot. i added half a tablespoon of garlic and a quarter of a diced onion. i still found it too overpowering. :(
Carbonara is funny like that. Or pasta recipes in general, it's hard to tell who to listen, and still the recipes are more or less equally authentic, so to say. The ones that ask for onion and garlic generally ask for cream in the recipe as well, though, by my experience. Sometimes even chicken stock or cubes to go with the cream! And the cream-based carbonaras are heavy. The sort of heavy that makes you feel like you've been kicked in the gut after dinner. But well, it's a good pain. ^^
I've always loved spam, it's the filipino in me. Spam fried rice was a classic breakfast in my house growing up. And then in High School, it was one of those weird theater things, we always ate spam before shows. Sweet and Spicy Spam was good, Spam Corn Dogs, not so much. I'll have to try this, and pass it along to my theater teacher. The question is, is Spam better for you then Bacon?

Yes- they are cooked by the heat of the pasta. It doesn't take very much to cook an egg to an edible and safe temp. The eggs make for a great sauce feel on carbonara.
For a high-metabolism person over 15 and under 30, this would be great treat. For a sedentary person over, say, 45, it LOOKS like an instant heart attack. Bet it's delicious, though.

i don't think garlic and onions is necessary. it will only overpower the flavour of the cheeses.

as far as im concerned original carbonara does not have garlic or onions (or cream).
Its only "bacon" (guanciale? panceta?), eggs, salt&peeper and several cheeses (i think its pecorino and parmeggiano).
