The bucket idea is sketchy, raccoons and other things could easily get into the containers, also depending on where you live bears, and bears aren't much fun to play with.
I am not sure how well burying the buckets so shallow will do. Even deep in the ground its a constant, what, 50 degrees? That's well into the "danger zone" where food will start to spoil. Plus, those buckets will need to be shaded or else they'll act like a green house in the sun - and your cheap "fridge" will become an oven.
I'm curious to see if you have moisture problems in the buckets. This is much easier since you live in a such a Northern climate on the cold hand, but the fridge usually keeps things dry on the other, and your climate is very wet.
Good for you! I haven't had a fridge since 1993 and I no longer miss it. I wish you luck and will be waiting to see more of how you make it without electic refridgeration.
Eating meat makes the frig removal sorta futile-takes a massive amt of energy to create meat for food...but you are trying things which is good.
